Thought I would share my herbaceous potatoes with you today. We don't celebrate Thanksgiving anymore. I don't feel like we should be celebrating a holiday centered around mass genocide, but that's a different post all together.
Instead we celebrate our harvest. We cook and enjoy the fruits of our labors and talk about plans for next season and enjoy each other's company.
This year our family opted for a bbq style meal. These are the potatoes I made. Really simple, really good. Can be served warm but way better cold.
5 lbs potatoes peeled and cook but still firm then rough chopped
A handful of herbs of your choosing (mine were marjoram, oregano, green onions and dill)
Ground mustard or a squirt of regular mustard
Salt
Pepper
A couple cloves of garlic minced or two of powder
Onion powder
A splash of apple cider vinegar
A few dashes of hot sauce ( I promise it doesn't make it hot)
2ish cups mayo (y'all should know by now I don't measure anything)
Paprika
Chop up the herbs, add everything in a bowl on the potatoes except paprika, mix real well. Top with paprika and chill
It's as simple as that.
