So this recipe came about when we had a bad month and hadn't budgeted our food money properly. It happens, you learn and move on.
What started out as a fairly cheap meal, turned into a staple here.
You will need:
1 lb Pasta, the shells I like the best as they hold a good amount of the sauce in them
1 lbs ground beef or 1/2 lb if you're really wanting to stretch it
Taco seasoning packet or homemade taco seasoning which you can find mine HERE
Nacho cheese or shredded cheese or both, really you can't ever go wrong with cheese
Small onion diced super small
1 tbsp minced garlic
1 tbsp tomato paste
1 cups of water or broth
1 tsp black pepper
Cook your pasta as directed. We like ours slightly al dente.
Brown up your hamburger, do NOT drain and add in the onions and garlic. Saute for a few minutes, making sure not to burn the garlic.
Stir in the tomato past and taco seasoning.
Pour in the water or broth and let it simmer for 5 minutes. It should thicken up a bit.
Add the hamburger mixture to the drained pasta and adjust seasonings to your liking.
Top with nacho cheese or shredded cheese. My hubs also added sliced pickled jalapeno to the top of his.
To make this stretch even further, you could add a can or 2 of rinsed black beans. Make sure you add a bit more water and taco seasoning if you do that so they will be nice and coated as well.
This meal is filling, frugal and delicious.
Feeds about 8 people and cost about 8$ for the entire pot.
